Kamado Joe Rotisserie Leg of Lamb Recipe

Ingredients:

• 4 lb boneless leg of lamb
• 2 tsp salt
• 1 tsp black pepper
• 1 tsp cumin powder
• 1 tsp cumin seeds
• 1 tsp paprika (optional)
• Note: Adjust seasoning to taste.

Directions:

1. Pat dry the lamb and season with salt, black pepper, and cumin powder. Add paprika if using.
2. Heat the Kamado Joe to 400°F.
3. Cook the lamb on the rotisserie for about 1 hour, or until the internal temperature reaches 135°F for medium-rare.
4. Open the lid and sprinkle cumin seeds over the lamb in the last 10-15 minutes of cooking, keeping the bottom vent open and letting it cook over the flames.
5. Let the lamb rest for 10-15 minutes before slicing.
